# Cheese and Olive Muffins

Savory muffins with three cheeses, olives and chives on a warm roux base. I make them for brunch or a snack table.

## What you need

- 3½ tbsp butter
- 1½ cups milk
- 6 tbsp all-purpose flour
- 1 can pitted olives
- 5 oz grated Gouda
- 5 oz grated Parmesan
- 3½ oz Bulgarian cheese or feta, grated
- 3 tbsp chopped chives
- 3 large eggs
- salt and pepper (to taste)
- 3 tbsp sesame seeds
- a little oil or cooking spray (for the pan)

## How I make it

1. Preheat the oven to 350°F (180°C).
2. Melt the butter in the milk in a saucepan, whisking until smooth.
3. Add the flour and whisk quickly until it thickens into a roux.
4. Add the cheeses and chives to the hot mixture, whisk, and let cool at room temperature for 15 minutes.
5. Transfer to a stand mixer bowl, add salt, pepper and the eggs, and beat on medium speed until airy.
6. Chop the olives and stir them in.
7. Grease a muffin pan with oil or cooking spray and spoon the batter into the cups.
8. Sprinkle with sesame seeds and bake for about 30 minutes, until golden.
